The Tianshen Green Matured Plum Wine Waltz Series was born from this land. Each bottle carries the spirit of Nantou’s mountains, crafted with high mountain tea, Xinyi green plums, and pure Tianshen Water, matured slowly over time to reveal layers of natural acidity and tea fragrance a poetic painting rendered in the colors of the earth itself.

The Story of Xinyi Green Plums

In the 1960s, Japanese settlers introduced green plums to Xinyi Township in Nantou. Over time, the trees took root deeply into this mountain soil. Today, Xinyi boasts over 400 hectares of plum orchards surrounded by lush forests and gentle climates, producing exquisite fruit that has earned it the title “The Homeland of Plum Wine.” Generations of Xinyi plum farmers preserve their craft with sincerity and respect for nature. This authenticity is the most precious foundation of Tianshen Plum Wine.

Climate

Xinyi Township’s cool, temperate climate with a day-night temperature difference of up to 10°C promotes healthy plum growth and imparts a distinct flavor.

Soil

The volcanic ash-rich and organic soil enhances root development, improving both texture and quality of the plums.

Altitude

Ranging from 1,000 to 2,500 meters, the region is enveloped in mist, offering ideal sunlight and temperature to enhance the sweetness and complexity of the fruit.

Water Source

Pristine mountain streams from surrounding forests ensure ample, clean irrigation, contributing to the superior quality of the plums.

The Craft: The Art of Time and Maturation

Fresh plums are carefully washed with Tianshen Water, air-dried and soaked in rice spirit for over six months at low temperature to extract natural aroma. Each expression is then infused with select high mountain teas charcoal-roasted, oolong, ruby black, or alpine green and matured for 12 to 18 months. During this slow passage of time, the sweetness of plum and fragrance of tea intertwine into a serene balance. No artificial flavoring, no excess every bottle is a collaboration between nature and time.
